What are plates(as in the plate from plate tectonic, not the plate for eating)?

Hi all, i was reading a book about plate tectonic and i came across two words. Plates and Crust. Can anyone define the words for me? Thanx

Tectonic or lithospheric plates consist of the crust and the uppermost portions of the mantle. The plate may be formed from oceanic or continental crust and its underlying mantle, or both. The thickness of the plates depends on whether they consist of young oceanic crust, old oceanic crust or continental crust. Oceanic crust is made up from basaltic lava flows and intrusives and is nowhere more than 200 million years old - It is created at the mid-ocean ridges and consumed at subduction zones. Continental crust consists of sediments, metamorphic rocks, volcanics and granitic intrusions, which are less dense than mantle rocks, so it cannot be subducted, and is consequently often very old (Up to 3500 million years old). Each plate interacts with others at its boundaries, and this is the theory of plate tectonics. For information on plate tectonics go to the websites below.
